Why does Spadaro insist that Greg Lewis is a lock to make this team?

If you figure that the first 3 WRs are Brown, Gaffney, and Pinkston, and Avant figures to make the team, what good does keeping Lewis, a player with an admittedly low ceiling, over someone like Baskett or McCants?

I don't think Pinkston is a lock to make this team at all.  Not until he's able to get out on the field and drop a few balls at full speed.  Then he'll be a lock.
