id like to know if their board is that thin truly because the are the only players they deemed worthy enough to make the big board or if because jerry and his crew only fully evaluated that many...it seems unfathomable to me that there would only be 120 players on a seven round big board

The blog that did the work, which seems to know their Cowboys, claims that's the total list of players the Cowboys considered worth drafting. They only draft players they are "sure" about. They have a separate big list of "priority free agents" they would like if they are leftover after the draft.
